Playing with a new boning knife design. This is m4 at 67.5hrc with a dual bevel grind with a very soft convex to zero on the edge. Dec 01, 2016Good thing I make my living making knives not chicken. Test went really well. This one is m4 at a 67.5hrc and not chipping. Most metals at this hardness just shatter when used hard like this. #noraknives #knowthyknife
