GENERAL USES OF THIS KNIFE
The paring knife is often overlooked but the truth is it is one of the single most-used knives in the kitchen. It is also unique with respect to where it is used...not just on a cutting board but also in hand.
With this in mind, we redesigned our paring knife to have a smaller, more nimble handle that feels great in hand and gives its user a wide amount of maneuverability. This knife works wonderfully for small tasks that are easier completed by using the knife in-hand, such as hulling a strawberry, paring fruit, or deveining shrimp.
We keep our paring knives a bit beefier behind the edge than our larger knives. We do this to ensure durability. If you are anything like us, we beat up on our parings pretty good so we need them to be tough as they do a huge variety of tasks for us. So if you wanted a very fine tipped paring then this may not be the right fit but if you need a good all-around workhorse paring then this is a great choice.
STEEL INFORMATION:
CTS-XHP STAINLESS STEEL
This knife blade is made from CTS-XHP stainless steel which is a premium stainless steel that we rarely offer because it is fairly hard to source. This steel has excellent durability for a stainless steel and it also can be taken to a fairly high hardness at 62 HRC. A higher hardness generally translates to greater edge retention and sharpness which is why this is such a sought after steel. Besides this, the actual stain resistance on this stainless is high. This may seem counter-intuitive as it is a "stainless" steel but many other stainless steels have a tendency to form small rust spots. They are "stainless," but just barely. This steel has a great combination of performance and stain resistance. You're not sacrificing one for the other which is nice when it comes to kitchen use. In general, this is an excellent steel choice that combines great performance with heightened durability.
HANDLE DESIGN & MATERIAL INFORMATION
Every one of our knives is numbered, handmade and unique. This NORA knife, number #1119, has been handled with a beautiful mix of hand-cast urethane resins with hues of rich Caribbean blue and a shimmering white pearl. We added a Black G10 liner for enhanced durability and the black carbon fiber pins match to bring the whole thing together. This is a cool little knife that should be a great workhorse for you in the kitchen.
