NORA knife #1024 is our take on the traditional Japanese Kiritsuke knife.
A Kiritsuke knife is one of the very few Japanese knives that is considered multi-purpose. It is a hybrid between a Yanagi (fish slicer) and a Usuba (vegetable knife.). A Kiritsuke knife works well for slicing and breaking down protein but it also excels at vegetable prep. and general purpose tasks. In Japanese kitchens, the Kiritsuke knife is reserved only for the executive Chef as a sign of respect and also due to the skill needed to efficiently use these knives.
Our Kiritsuke design does not have as flat of a belly as the more traditional Japanese style knives. We have done this to allow just the slightest amount of rock in the cut. We feel it adds a bit more versatility to the knife.
This knife has been handled with a beautiful Shokwood scale which is a hybrid mix of live edge wood and urethane based resins. The wood is big leaf maple burl wood and is complemented by a simple and elegant mix of white resin with a very subtle shimmer.
The wood on this handle has been stabilized for durability. Wood stabilization is an added feature that we offer with our knives. Wood that is stabilized has been injected with a clear acrylic resin under a vacuum process. Stabilization helps to minimize, if not eliminate, any cracking, warping, shrinkage and/or expanding of the material. Stabilized wood will not absorb water and is generally impervious to oils. The process helps to ensure your knife has a long lifespan in the kitchen.
This knife was engraved with a limited edition logo that was designed by us personally. The logo was inspired by an older cigar box and we feel it fits nicely with this classic looking knife.
This knife blade is composed of CTS-XHP stainless steel which is a premium stainless steel that we rarely offer because it is hard to source. This steel has excellent durability for a stainless steel and it also can be taken to a high hardness at 62 HRC. The high hardness helps with both edge retention and edge durability. On top of this, the actual stain resistance on this stainless is excellent. This sounds perhaps like a no brainer but keep in mind there are varying degrees of stainless steel and some of our other stainless steels, such as AEB-L, are more prone to very light rust spots.
In general, this is a great all-around choice for steel as it combines great performance with heightened durability. Please note that XHP tends to have a bit of weight to it so if you like a knife with a little heft, this is a great choice.
